My 2 Minutes Blueberry Muffins

These muffins are by far my favorite. They are super clean, delicious, nourishing, they got just the right crisp on top and take literally 2 minutes to make!



Dry ingredients - 1 ¾ spelt flour, ½ tsp. baking soda, ½ tsp baking powder, 1 tsp. cinnamon powder, pinch salt.


Wet ingredients - 1 tsp. vanilla extract, ½ cup olive oil, ⅓ cup maple syrup, 2 eggs, 1 cup ‘Kite Hill’ vegan sour cream.


1 ½ cup blueberries



Preheat oven at 350F

Combine all the dry ingredients in one mixing bowl. 

Combine all the wet ingredients in another mixing bowl.

Pour the wet ingredients into dry ingredients' bowl and mix well. 

Add in the blueberries and stir again. 

Now place the batter in your pre-heated oven at 350F for approximately 30-35 minutes or until golden.
